Radish & Courgette salad

I love putting radishes in salads, where they are divine because they give a salad a little peppery kick. Also, radishes are crammed full of nutrients - vitamins A, C, E & K, plus minerals, zinc, potassium, phosphorous, magnesium, copper, calcium, iron and manganese. Phew! Plenty of good reasons to add them to your food :-) 

Ingredients –

For the salad

1 Gem lettuce
8 radishes
2 sticks celery
1 small courgette
2 tbsp chia seeds
 

For the dressing

3 tbsp olive oil
1 tbsp apple cider vinegar
1 tsp wholegrain mustard
Salt & pepper to taste

Method

Wash and roughly chop the lettuce and layer it in the bottom of the salad bowl. Clean the radishes, celery and courgette. I like minimum preparation time, so I then then whizz them up in a food processor until they have a “grated” consistency. Mix together with the chia seeds and then place onto the layer of lettuce.

In a separate bowl, mix up all the dressing ingredients and then drizzle onto the salad, mix everything together and then serve.
