Carrot and Apple Muffins

You might notice that I have several different muffin recipes, and that’s because I love them! They are so versatile and currently loving them for kids lunch boxes (instead of boring sandwiches). They are so easy to make, literally five minutes to whizz them up… perfect for breakfast, snack or lunch box. Makes about 12 muffins.

Ingredients

2 carrots
2 apples
100g gluten-free flour
100g gluten-free oats
1 desert spoon coconut flakes
1 desert spoon chia seeds
2 desert spoons coconut oil
2 tsp baking powder
2 eggs

Method

Grate the apples and carrots (or use a food processor).  Then add all the other ingredients in together into a food processor mix thoroughly.

Oil a muffin tray (or you can use cupcake holders) and add some mixture to each muffin mould.  Bake in the oven for 35-40 minutes at 170 degrees.
