Orange and coconut macaroons

Not gonna lie, it took me three attempts to nail this recipe - but finally we have something that (in my husband’s words) is very moreish. I found that using a mix of the desiccated coconut and the flakes meant that the consistency came out better (on attempt 3). You can just use desiccated coconut if you prefer. A fun recipe to do with the kids and delicious!

This recipe makes about 10-12 macaroons.

Ingredients

1 orange (zest and then juice)
15g coconut sugar
1 egg
1 TBS coconut oil (melted)
1 tsp vanilla extract
1 TBS coconut flour
50g desiccated coconut
50g coconut flakes

Method

Heat the oven to 180 degrees. Grate the orange peel into zest into a medium sized bowl and then add the coconut sugar, egg, vanilla extract and melted coconut oil. Mix together thoroughly and then add the juice of the orange, and mix again.

Then add the rest of the ingredients and mix them all well.

Using a table spoon at a time, you can form the macaroons. Place them on parchment paper on a baking tray and then pop in the oven for 10-12 minutes.
