Kale and Radish Salad
I love Salad! Now that it’s salad season I’m all for creating some more unusual ones, and here’s my latest creation. This one has crispy kale on top, which I find is the best way to get my kids to eat kale. It also goes so well with the toasted coconut flakes.
Ingredients
For the kale crisps…
2 handfuls of shredded kale
1 TBS olive oil
salt to taste
For the rest of the salad…
1/2 head shredded lettuce (or any leaves)
10 sliced radishes
Toasted coconut flakes
A drizzle of olive oil and balsamic vinegar as a dressing
Method
I first made the kale crisps - rub olive over shredded kale and sprinkle some salt on top. Then pop in the oven on a baking dish with a rack for 15 mins on 160. They should come out nice and crispy.
Then shred some lettuce, slice the radishes and add to the lettuce. Then sprinkle over some toasted coconut flakes and the crispy kale. You can add a drizzle of olive oil and balsamic vinegar as a dressing.
