Beetroot and Courgette salad

 
 

I love salads, especially in the summer and this one is refreshing, filling and full of anti-oxidents. I love this one on a Sunday evening after a busy and hectic weekend. Beetroots are so good for you, full of vitamins and minerals, a great source of fibre, manganese (regulates our blood sugar levels) and potassium (supports healthy blood pressure). This makes a salad for two (as a main), or four (as a side dish).

Ingredients –

For the salad

1 beetroot
2 carrots
1 baby gem lettuce
Handful of Basil
1 Courgette

For the dressing

3 tbsp olive oil
1 tbsp apple cider vinegar
1 tbsp coconut yoghurt
1 tsp wholegrain mustard
1 garlic clove crushed
Salt & pepper to taste

Method

Peel and grate the carrots and beetroot, and grate the courgette.  Finely chop the basil leaves.  Or if you are feeling lazy (which I often am on a Sunday evening), you can whizz these ingredients up in a food processor, so they have a “grated” consistency.

Roughly chop the baby gem lettuce and layer it in a salad bowl, then add the grated mixture on top.  In a separate bowl, mix up all the dressing ingredients and then drizzle onto the salad.  Enjoy!
