Pumpkin & sunflower seed granola

This is the perfect breakfast.  Full of protein and healthy fats to keep you full until lunch time... I make up a batch of this every couple of weeks and is a great alternative to sugary breakfast cereals.  The honey gives it a touch of natural sweetness as well.

Ingredients

200g sunflower seeds
200g pumpkin seeds
200g chopped cashew nuts
200g oats
2 desert spoons coconut oil
2 desert spoons almond butter
2 desert spoons raw honey (or maple syrup)
1 tsp cinnamon
1 tsp vanilla powder
(optional) 50-100g raisins 

Method

Turn on the oven to 160 degrees. Then melt the coconut oil, almond butter, raw honey, cinnamon and vanilla powder (I do this in a saucepan). Mix together the pumpkin and sunflower seeds with the oats and nuts in a large bowl and then pour over the melted mixture.  Mix all the ingredients until everything is coated.

Put the granola onto a large baking tray.  You now want to bake it in the oven for about 40 mins, but set the timer to turn the mixture after every 10 minutes otherwise the top will burn.  It's cooked when it's a lovely golden brown colour.

Leave it to cool for about half an hour, and then you can add raisins to the final granola if you want to for taste.  Raisins will add a pop of sweetness if needed.
