Aduki bean, carrot & cauliflower salad

Salads are so quick and easy to create and if you include some good quality protein, then you'll feel full and satisfied after your meal.  I particularly love salads in the evenings if I don't have time to cook "properly". This one is made with aduki beans, which are so good for you!  If you are stressed, then this is a good salad to eat, because aduki beans support your adrenal glands which go into over-drive during stressful times. 

Ingredients –

For the salad

1 can aduki beans
1/2 can chick peas
2 carrots
1/4 head of cauliflower
1/2 yellow pepper, finely diced
Handful of pea shoots (or just a handful of any leaves) 
Handful of mixed seeds (pumpkin & sunflower seeds)
 

For the dressing

3 tbsp olive oil
1 tbsp apple cider vinegar
1 tbsp coconut yoghurt
1 tsp wholegrain mustard
1 garlic clove crushed
Salt & pepper to taste

Method

Peel and grate the carrots and cauliflower (or if you are feeling lazy, then whizz them up in a food processor until they have a “grated” consistency). Finely dice the pepper. Mix the carrots, cauliflower, peppers in a bowl.  Drain the cans of aduki beans and chick peas and add to the vegetables, then add the mixed seeds and pea shoots/leaves.  Mix them all together.

In a separate bowl, mix up all the dressing ingredients and then drizzle onto the salad, mix everything together and then serve.
