Simple lentil dhal

This lentil dhal is so easy to make and a perfect warmer as the evenings get darker and the nights get longer.  The protein in the lentils make this a very filling meal and can be frozen if you are meal prepping.

Ingredients

250g red lentils
2 medium onions
2 garlic cloves
1/2 green pepper
2 tsp turmeric
1 can coconut milk
2 TBS coconut oil
Salt & pepper to taste
Chilli flakes (optional)

Method

Finely chop the onions and garlic and fry in pan until golden.  Rinse the lentils thoroughly until the water runs clear and then add to the pan with 250ml of water.  Pour over the coconut milk.  Chop the green pepper and add to the pan with the turmeric, salt, pepper (and optional chilli flakes).

Let everything simmer in the pan for about 15-20 minutes until the lentils are soft.  Serve up with some brown rice.
