Spiced mushroom & courgette
This is fabulous if you are rushed for time, it’s high protein, vegan and so quick and simple to make. Great on its own, or you can serve with brown rice if you prefer.
Shepherdess Pie
This is my take on Shepherd’s Pie (so I’ve called it Shepherdess Pie instead!)… loads of veg, lentils and totally got the thumbs up from my meat-eating family. It’s filling, warming, comforting and very nutritious.
Vegan "chicken" fajitas
More and more I'm experimenting with vegan food for the whole family... So here is my vegan "chicken" fajitas made with soya protein chunks... Xanthe said it's "so good, I just want to keep eating it". Well, they didn't miss the chicken part then!
Mushroom & Spinach curry
This is so simple and can easily be rustled up in about 15 minutes (or less possibly). It’s vegan, and high protein because of the beans and high fibre too. It’s also very filling. Eat on its own, or serve with brown rice or quinoa.
Roasted peanut & butternut squash
I love nothing more than a simple, easy recipe… something that is quick and that I can shove in the oven! This is vegan, and so delicious that my family were wolfing it down. With a hint of satay, it’s very more-ish and also very filling.
Sweet potato & fish pie
I’ve been experimenting for months with a dairy-free & gluten-free fish pie, and this is it! I love fish pies, but not so much when they are super creamy. So this is my version of a fish pie.
Ginger, Carrot & Lentil Soup
This is so quick & easy to make and totally perfect for a chilly day. It’s carrot soup with a kick, so if you like a little zing, then this is for you! With the lentils, it’s also super filling too so will keep you full until your next meal.
Rainbow Quinoa Salad
This is a very filling salad - fab as a light lunch on its own, or as a side dish. The combination of the smokey paprika and the zingyness of the dressing is divine, and the rainbow colours are lush.
Radish & Courgette salad
I love putting radishes in salads, where they are divine because they give a salad a little peppery kick.
Sun-dried tomato and olive pasta sauce
I was having a "oh dear I didn't prepare any supper for the kids" moment, so rustled up this super quick pasta sauce. It was a hit with the whole household! This was made with some chickpea pasta which is delicious.
Sweet potato & broccoli curry
This is quick, easy and oh so warming! Perfect on a chilly night. The prawns are optional, so this makes a great vegan dish as well.
Simple lentil dhal
This lentil dhal is so easy to make and a perfect warmer as the evenings get darker and the nights get longer.
Aduki bean, carrot & cauliflower salad
Salads are so quick and easy to create and if you include some good quality protein, then you'll feel full and satisfied after your meal. I particularly love salads in the evenings if I don't have time to cook "properly"...
