Macadamia and almond energy balls

As my husband puts it, these taste like white chocolate!  They have satisfying sweetness, but packed full of protein to give you that energy hit. 

Ingredients

100g macadamia nuts
200g ground almonds
2 desert spoons cashew butter
2 scoops vanilla protein powder
1/2 tsp cinnamon
1 TSB cacao nibs
1 TSB coconut oil

Method

Put the nuts, and protein powder in a food processor and whizz up until the nuts are finely chopped.  Then add the cinnamon & cocoa nibs and mix again.  Finally add the coconut oil and cashew butter.  Mix everything together well until it starts forming together.  

Roll the mixture into balls - about the size of small golf balls.  Pop them in the fridge to harden, and keep them stored in the fridge for a week (if they last that long!) This should make around 20 energy balls.
