Chocolatey brownies

Growing up, my mum used to make the most divine chocolate brownies! Over the last few years I've been experimenting with the recipe to make something less sweet that tastes just as delicious.  These ones are my happy medium brownies and have passed the taste test at numerous kids' birthday parties!  Sweet enough to satisfy even the fussiest of eaters, but not too sickly sweet either.

Ingredients

125g coconut oil (or butter if you prefer)
9 TSP raw cacao powder
4 eggs
160g coconut palm sugar
1 TSB xylitol
100g nuts (I use pecans, cashew nuts or almonds)
1tsp vanilla extract (aim for the sugar-free variety)
100g ground almonds

Method

Put the oven on to 180 degrees.  Then melt the coconut oil and mix with the raw cacao powder and then leave to cool.  Meanwhile whizz up the eggs and coconut sugar in a food processor for about 2 mins.  When cooled, add the coconut oil/cacao mix and whizz up again for a minute.  Then add the xylitol, chopped nuts and vanilla extract.  Once everything is nicely mixed together, add the ground almonds.

Grease a baking tray with coconut oil and then pour the mixture into the baking tray and pop into the oven.  Bake for 15-20 minutes, until you can poke a fork into the brownies and it comes out clean.  This makes about 24 brownies.
