Dr Lara's banana bread

 
Banana bread
 

Everyone seems to be making banana bread at the moment, so I jumped on this band wagon and created this version. It’s super moreish and the whole family gobbled it up. Again, a simple and quick recipe that takes only a few minutes to whip up.

Ingredients

100g gluten-free flour
50g green banana flour (my new fave, but if you don’t have any, just use normal GF flour)
1tsp baking powder
50g raw cane sugar
25g nuts (I used pecans)
25g raisins
25g mixed seeds (pumpkin & sunflower)
2 tsp baking powder
2 large bananas
1 carrot
80g coconut oil
1 egg

Method

First, put the oven on at 170 degrees. This is so simple, easy and quick to make: add all the ingredients together into a food processor mix thoroughly.

Line a bread tin with baking parchment and pop into the oven for about 30 mins (or until when you spear it, the fork comes out clean) at 170 degrees.
