Vegan Chocolate Mousse
I learnt something new today! The liquid that you drain off a can of chickpeas has another use (rather than chucking it away) - you can use it to make vegan chocolate mousse, absolutely perfect if you are dairy free. I made this one and it was so delicious I had to share the recipe...
Ingredients
140g dark chocolate
For a bit of sweetness: either a few drops stevia, or 1 TBS coconut sugar
The water (otherwise known as aquafaba) from 1 can of chickpeas
1 tsp lemon juice
Method
Melt 140g dark chocolate (for healthier version add a few drops of stevia to sweeten, or add a TBS of coconut sugar).
Drain a can of chickpeas, pop chickpeas away and use the water (otherwise known as “aquafaba” - i.e. the posh word for the drained chickpea water). Then add 1 tsp of lemon juice to the "aquafaba" and whip it up using an electric whisk (I used a hand held one). You want to whip it until it creates a firm peak (took me about 6 mins, and then I could turn the container upside down and it doesn't drip out - pretty cool).
Finally, fold the aquafaba into the chocolate & voila you have chocolate mousse. Pop in the fridge if you are eating later, or - like me - eat straight out of the bowl!
