Peanut butter cookies

High protein cookies anyone? Cookies that all the family can enjoy… very mooreish indeed. They are seriously easy to make - just a few minutes to whip them up. It’s also a fun recipe to do with the kids, low sugar yet still delicious!

This recipe makes about 12 cookies.

Ingredients

100g peanut butter (or almond butter)
20g coconut sugar
2 eggs
2 TBS coconut oil (melted)
30g coconut flour
1/2 tsp baking soda
1 pinch of salt
2 TBS cocoa nibs

Method

Heat the oven to 180 degrees. Add all the ingredients together and mix well in a food processor. Using a table spoon at a time, you can form the cookies. Place them on parchment paper on a baking tray and then pop in the oven for 10-12 minutes.
